Joseph Gilman, also known as Fishy Joe, is the owner of various restaurant chains, such as Fishy Joe's fast food franchise and Family Bros. Pizza. He is also the leader of Circus Roboticus. Gilman mostly sells any kind of animal at his restaurants as long as it tastes well, and will buy any kind of products if it is popular. He doesn't care about the environment and, as a result, is hated by MEAT.

In the commentary for "The Problem with Popplers", it is stated that the Gilman last name is simply because "fish have gills". Coincidently, in the classic H. P. Lovecraft story The Shadow Over Innsmouth, a fishy character named Gilman runs the Gilman Hotel.
